For the past few months now I’ve been smoking and grilling on the Big Green Egg. I had an entry level kamado grill before to see if this was something I would like before upgrading to the BGE. After about 200 solid cooks and inconsistent heat, I decided to make the switch. By doing that, my family and friends now expect better food… expectations are running high in the Fraser household! It didn’t take me long to learn how to use the Big Green Egg, and in fact, it has made my outdoor cooking easier. Cooking over lump coal is a work of art in itself, but what is impressive about the BGE is how easy it is to control the temperature for grilling and long smokes. Thank goodness because the family pressure was getting to me 😉

Youtube, Audio Glasses, and Spatchcocking a Chicken?

Now that is a headline! Who knew how useful my new Lucyd Lyte bluetooth glasses would be in learning this method of cooking a chicken. After smoking a whole chicken and sharing the photos in the Pints, Forks & Friends community I noticed a few of the comments were mentioning this word “spatchcock”. I mean, it is a unique word, lol. So I looked it up..

 

Spatchcock – /ˈspaCHˌkäk/

Noun: a chicken or game bird split open and grilled.

Verb: split open (a poultry or game bird) to prepare it for grilling.

“these small spring chickens can be bought already spatchcocked”

 

Okay this all made sense, so my next step was to check out one of my favorite Youtube Channels – The Bearded Butchers, aka Seth & Scott Perkins. Seth and Scott are brothers that launched their “Bearded Butcher” seasoning brand a few years back aside from running their family business Whitefeather Meats. Not only do I enjoy their seasonings, but also bought my Big Green Egg, and a lot of their locally sourced, humanely harvested, and professionally processed meats from them. It’s a really cool story to follow, they’re pretty much the “butcher authority” channel on Youtube which has been viewed millions of times.

As luck would have it, I found a video on their channel titled “How to Spatchcock Chicken! (One of Our Best Chicken Recipes)

This was my aha moment using my Lucyd Lyte audio glasses in a more technical way. I prepare all the food I’m going to smoke or grill outside, because my wife says my preparation is a little messy, I think I’m pretty clean, but whatever. Anyways, I set my iPhone up on my grill shelf and synced my Lucyd Lyte Bluetooth Sunglasses and fired up The Bearded Butcher’s spatchcock chicken video showing me how to butterfly the chicken. What made it nice was having the audio right in my ears hands-free, BUT still hearing my environment around me and knowing if Theresa called, I wouldn’t be oblivious as I would have been with earbuds. I can’t stress how important that feature is being outside and in the moment.

 

The End Result

For my first time smoking chicken this way, it turned out phenomenal. I totally see why cooking chicken this way is popular. It does involve a few extra steps, but the end result is pure deliciousness.

I know for a fact that if I didn’t have my Lucyd Lyte Bluetooth Glasses it would have not gone as smooth, having that audio right there hands-free, and staying connected to everything else going on around me, is priceless. I’m calling out to all you “backyard bbq” masters… You need a pair of these smart glasses!
